Roast Potatoes

Ingredients

  • Potatoes, peeled and chopped in half or thirds (or to desired size)

  • Large dollop of lard / beef dripping

Instructions

  1. Preheat oven to 400f

  2. Cover the potatoes in cold water in a pan, bring to the boil

  3. Boil for 10 mins, when 5 mins remain put the roasting pan and lard in the oven

  4. Drain the potatoes and put in the heated lard, shake/turn to try and cover all sides with the lard

  5. Cook for 40 / 50 mins shaking once or twice
