Mince Pies

Ingredients

  • 4oz butter

  • 8oz Plain flour

  • 1oz Icing Sugar

  • 1 egg yolk

  • 8oz mincemeat

  • Beaten egg to glaze

Instructions

  1. Cut the butter into cubes

  2. Sift the flour into a mixing bowl and add the butter

  3. Using your fingertips rub the butter into the flour until it resembles fine breadcrumbs

  4. Stir in the icing sugar

  5. Make a well in the center, stir in the egg yolk and about 2-3 tbsp iced water to make a soft but not sticky dough

  6. Knead lightly to form a smooth dough and chill for 30 minutes

  7. On a floured surface, roll out two thirds of the dough and cut out 15 rounds using a 2 1/2" (6cm fluted cutter)

  8. Line the tins with the cut out round and fill each with mincemeat

  9. Roll out the remaining pastry, cut into 2” / 5cm circles and place on top of the pies

  10. Seal the edges, brush the tops with the beaten egg and cook for 20 minutes at 400°F
