Mince Pies
Ingredients
4oz butter
8oz Plain flour
1oz Icing Sugar
1 egg yolk
8oz mincemeat
Beaten egg to glaze
Instructions
Cut the butter into cubes
Sift the flour into a mixing bowl and add the butter
Using your fingertips rub the butter into the flour until it resembles fine breadcrumbs
Stir in the icing sugar
Make a well in the center, stir in the egg yolk and about 2-3 tbsp iced water to make a soft but not sticky dough
Knead lightly to form a smooth dough and chill for 30 minutes
On a floured surface, roll out two thirds of the dough and cut out 15 rounds using a 2 1/2" (6cm fluted cutter)
Line the tins with the cut out round and fill each with mincemeat
Roll out the remaining pastry, cut into 2” / 5cm circles and place on top of the pies
Seal the edges, brush the tops with the beaten egg and cook for 20 minutes at 400°F
