8 oz Self Raising Flour
Pinch of Salt
1 tsp baking powder
2 oz Butter (softened)
2 oz Caster Sugar
1 egg (beaten)
4 fluid oz (1/2 cup 120ml) Milk
Sieve the flour, baking powder and salt
Rub the butter into the flour until it resembles bread crumbs
Add the sugar to the mix
Mix the egg and milk together in a separate bowl
Add a little of the egg/milk mixture at time to the dry ingredients - the mix should not be too sloppy or dry and resemble a pastry
Roll out the pastry and cut into approx. 2" circles, lay them out on a baking tray so they are almost touching
Brush the tops with the remaining egg/milk mixture
Cook for approx. 15 minutes @400°F
