Left over Turkey Curry

Ingredients

  • 5 medium potatoes, peeled and chopped

  • 1 onion, diced

  • 2 tbsp madras curry powder

  • 6 rashers of bacon, chopped (optional)

  • 400ml turkey stock

  • 1 tbsp tomato puree

  • Left over turkey, diced

Instructions

  1. Cover the potatoes with water, bring to the boil for 10 minutes (10 mins boiling) and set aside

  2. In a large saucepan fry the onions in the oil until clear and soft.

  3. Add the curry powder and stir into a paste then add the turkey and bacon, if using.

  4. Cook for 5 minutes until the turkey has taken the color from the curry powder then add the potatoes.

  5. Add to the saucepan the turkey stock and tomato puree then simmer for 20 minutes stirring regularly
