Beef Goulash

Ingredients

  • 2lb braising steak

  • 1 tbsp sunflower oil

  • 2 medium onions, each cut into 12 wedges

  • 2 tsp smoked paprika

  • 1 tbsp paprika

  • 1 beef stock cube

  • 2 tbsp tomato purée

  • 2 x 400g tins chopped tomatoes

  • 1 large red and 1 large yellow pepper, deseeded and cut into roughly 1in chunks

  • Flaked sea salt

  • Ground black pepper

Instructions

  1. Preheat the oven to 325°f

  2. Trim any hard fat from the beef and cut the meat into roughly 1in chunks, season well with salt and black pepper.

  3. Heat the oil in a large flameproof casserole dish. Add the steak and fry over a high heat until lightly coloured, turning every now and then.

  4. Tip the onions into the pan and cook with the beef for a few seconds.

  5. Sprinkle both paprikas over the meat and crumble the beef stock cube on top.

  6. Add the tomatoes and tomato purée. Season with salt and pepper, stir well and bring to a simmer.

  7. Cover with a tight-fitting lid and transfer to the oven. Cook for 1 hour.

  8. Remove the casserole from the oven, stir in the peppers, replace the lid and cook for 1 hour
