Blueberry Muffins
Makes approx 8 to 10

1 1/2 cups plain flour
3/4 cup sugar
1/4 tsp sea salt
2 tsp baking powder
1/3 cup of vegetable oil
1 egg
milk
1 1/2 tsp vanilla extract
1 cup of fresh or frozen blueberries

Preheat oven to 400°F
Combine the flour, sugar, salt and baking powder in a bowl
Add the oil to a measuring jug, add the egg. Fill the measuring jug up with milk to 1 cup (8floz), add the vanilla extract and whisk to combine
Add oil mixture to the dry and mix with a fork until combined (it will be thick)
Fold in the blueberries and divide between the muffin cases (filling to the top of the case)
Sprinkle a little sugar (white or brown) on each, bake for 20 minutes
