1tbsp pepper
40ml salt
1cup brown sugar
Maple syrup
Salmon filet
Mix the dry ingredients together
Roll out cling film and to size of the filet and layer 1/2 of the mix onto the cling film.
Place the salmon on the mix, and spread the remaining 1/2 over the top of the salmon.
Drizzle with maple syrup and wrap with cling film (a few times)
Refrigerate over night
2 hours before smoking rinse off all the rub, and start soaking the planks, leave salmon on the side to dry out while the planks soak for 2 hours
Pre-heat the Trager to 180f
Smoke for 3 1\2 hours
