Piri Piri Chicken

Ingredients

  • 1 Yellow Pepper, cut into chunks

  • 1 Red Pepper, cut into chunks

  • 1 Red Onion, cut into wedges

  • 1 1/2 tbs oil

  • 1/2 tsp Salt

  • 3 tbsp Lemon juice

  • 4 Chicken breasts

  • 1 Orange, cut into wedges

  • 1/2 tsp Coriander Leaf

  • 1 tsp Crushed Chilies

  • 1 tsp Garlic powder

  • 1 tsp Paprika

  • 1 tsp Lemon Pepper Seasoning

  • 1 tsp Ground Coriander

Instructions

  1. Pre-heat the oven to 400°F

  2. Mix together the peppers and onion with the Ground Coriander and 1/2 tbs of the oil, transfer to a large oven proof tray

  3. Place the chicken on top of the vegetables in the tray

  4. Squeeze the orange wedges over the chicken and vegetables, then place them in the tray

  5. Cook in the oven for 40 minutes
