Fried Rice

Ingredients

  • 2 chicken breast, cut into small 1cm cubes

  • 6 slices of wafer thin ham, finely chopped (optional

  • 3 spring onions, chopped

  • 2 garlic cloves, crushed

  • 1" sq. finely chopped ginger

  • 2 eggs, beaten

  • Light soy sauce

  • 2 cups basmati rice

Instructions

  1. Heat some oil in the wok, and fry the egg making an omelet. Remove from the wok and set to one side

  2. Add the chicken to the pan and cook (optionally add the ham after 3 minutes) for 8 minutes.

  3. Add the spring onions, garlic, and ginger to the wok cooking for 2 minute

  4. Chop the omelet

  5. Whilst draining the rice add the chopped omelet to the work

  6. Add the rice to the wok, and splash with soy sauce, mix well and serve
