Syrup / Jam Sponge

Ingredients

  • 4 oz Margarine

  • 4 oz Caster Sugar

  • 2 Eggs

  • 8 oz Self Raising Flower

  • 2 tbsp Milk

  • 4 tbsp Golden Syrup or Jam

Instructions

  1. Mix the margarine and sugar together well

  2. Add the eggs to the mixture and mix

  3. Add the milk, and mix

  4. Add the flour and mix well

  5. Add 1 tbsp of syrup or jam to a ramekin dish and cover with 1/4 of the mixture

  6. Cover the bowls with grease proof paper tied tightly to the bowl with string

  7. Place the bowls in a large pan of boiling water (ensure the water does not reach the top of the dishes), cover the pan and simmer for 1 hour 30 minutes
