Mini Glazed Lemon Loaf

Ingredients

  • 3 tbsp butter or margarine, melted

  • 1/3 cup sugar

  • 1 egg

  • 2 tbsp sour cream

  • 1 tsp lemon zest

  • 1/4 tsp lemon extract

  • 1/2 cup all-purpose flour

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup confectioners' sugar

  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F. Lightly spray 5 3/4"x3" pan with vegetable pan spray

  2. In a small bowl, combine flour, baking powder and salt

  3. In medium bowl, combine melted butter, sugar, egg, sour cream, zest and extract; whisk thoroughly

  4. Gently fold in flour mixture, mixing only until incorporated

  5. Pour batter into pan and bake 28-32 minutes or until toothpick inserted in center comes out clean

  6. Cool cake in pan on cooling rack 5 minutes; remove from pan. Cool completely

  7. Combine confectioners' sugar and lemon juice; drizzle over top of cooled loaf
