Ginger Cake

Ingredients

  • 8 oz Plain Flour

  • 1/2 tsp salt

  • 2 tsp Ground Ginger

  • 1/2 tsp Bicarbonate of Soda

  • 1/2 tsp Baking Powder

  • 1/4 tsp Mixed Spice

  • 2 1/2 oz butter

  • 4 1/2 oz Soft Brown Sugar

  • 4 1/2 oz Black Treacle

  • 4 1/2 oz Golden Syrup

  • 150 ml Milk

  • 1 Egg (beaten)

  • Zest of 1 Lemon (grated)

Instructions

  1. Pre heat the oven to 160°c (320f)

  2. Sieve together all the flour and other dry ingredients

  3. Gently melt the butter, sugar, treacle, and syrup in a large pan

  4. Add the dry ingredients to the melted mixture along with the milk, egg, and lemon. Mix well

  5. Pour into a 2 1/2lb loaf tin and bake for 45 minutes

  6. Store in an airtight container.
