12 oz Plain Flour
6 oz butter, cubed
2 oz Icing Sugar
1 Egg yolk
2 lb cooking Apples
1 tsp whole Cloves
6 oz Marzipan, grated
A litte beaten egg white
1 tbsp Caster Sugar
8" deep flan tin
Sieve the flour into a mixing bowl. Add the butter and rub into the flour until the mixture resembles fine breadcrumbs
Stir in the icing sugar. Make a well in the center and stir in the egg yolk and about 3 to 4 tbsp of iced water to make a soft but not sticky dough
Peel, core and thinly slice the apples and place in a pan with about 150ml of water and the cloves
Cook gently for about 5 to 10 minutes until soft but still holding their shape. Leave to cool
Pre-heat oven to 400°F. Roll out the pastry and use it to line the 8" tin
Drain the cooked apples, remove the cloves and spoon it into the pastry case. Layer the marzipan over the apple.
Using the reserved pastry trimmings, make a lattice design for the top.
Glaze with egg white, sprinkle the caster sugar and cook for 35-40 minutes, until it becomes golden brown
