Chicken Burgers
Ingredients
1 pint of water
1 tbsp salt
1 tbsp sugar
3 cups of ice cubes
2 chicken breasts sliced in half
2 tsp paprika
1/2 tsp pepper
1/2 tsp cayenne pepper
1 cup plain flour
1 tsp baking powder
2 tsp sugar
1/2 cup of milk
1 egg
Instructions
Add the salt and sugar to the water in a small pan and bring to the boil
Add the brine solution to a bowl and add the ice, stirring until cool.
Add the chicken to the brine solution cover and refrigerate for about 5 hours
Mix the paprika, pepper, and cayenne
Beat the egg and milk together
Mix the flour, baking powder, sugar, 1 tsp of the paprika mix
Add 3 tbsp of the milk/egg mix and rub together to form rough bread crumbs
Heat oil in a pan / wok (batter should spit/boil if it is hot enough when added)
Pat dry the chicken, and rub in the paprika mix
Dip into the milk/egg and then squash it into the flour mix pressing the mix into the chicken
Fry for 5 minutes turning 1/2 way
