Chicken Burgers

Ingredients

  • 1 pint of water

  • 1 tbsp salt

  • 1 tbsp sugar

  • 3 cups of ice cubes

  • 2 chicken breasts sliced in half

  • 2 tsp paprika

  • 1/2 tsp pepper

  • 1/2 tsp cayenne pepper

  • 1 cup plain flour

  • 1 tsp baking powder

  • 2 tsp sugar

  • 1/2 cup of milk

  • 1 egg

Instructions

  1. Add the salt and sugar to the water in a small pan and bring to the boil

  2. Add the brine solution to a bowl and add the ice, stirring until cool.

  3. Add the chicken to the brine solution cover and refrigerate for about 5 hours

  4. Mix the paprika, pepper, and cayenne

  5. Beat the egg and milk together

  6. Mix the flour, baking powder, sugar, 1 tsp of the paprika mix

  7. Add 3 tbsp of the milk/egg mix and rub together to form rough bread crumbs

  8. Heat oil in a pan / wok (batter should spit/boil if it is hot enough when added)

  9. Pat dry the chicken, and rub in the paprika mix

  10. Dip into the milk/egg and then squash it into the flour mix pressing the mix into the chicken

  11. Fry for 5 minutes turning 1/2 way
