Roasted Red Pepper, Mozzarella & Basil Chicken

Ingredients

  • 4 Chicken breast

  • 8 oz fresh Mozzarella, sliced into 8 slices

  • 1 bunch of Basil leaves

  • 1 tbsp Italian Seasoning

  • Salt & Pepper for seasoning

  • Olive oil

Instructions

  1. Drizzle the oil over the pepper, sprinkle with salt and broil for about 15 minutes, turning so they don't burn

  2. Grease a 9"x12" casserole dish

  3. Butterfly the chicken by slicing into the long side of the breast, stopping just about 1/4" from the opposite side

  4. Lay the chicken in the dish opened up. Sprinkle the exposed insides of the chicken with 1/2 of the Italian seasoning, salt, and pepper

  5. Stack the roasted pepper, basil, and 1 slice of mozzarella inside the chicken. Fold the chicken shut, sprinkle the remaining Italian seasoning over the chicken

  6. Bake for 40 minutes

  7. Top each breast with a slice of mozzarella and broil until the cheese is browned and bubbly (about 5 minutes)
