Lemon Meringue Pie
Ingredients
1 Cup Sugar
2 tbsp Plain Flour
3 tbsp Cornflour
1/4 tsp salt
1 1/2 Cups Water
2 Lemons (juice + the zest)
2 tbsp Butter
4 Egg yolks (beaten)
9" Pie crust (baked)
4 Egg whites
6 tbsp Sugar
Instructions
Preheat the oven to 350°F
In a sauce pan whisk the cup of sugar, flour, cornflour and salt
Stir in the water and lemon, and cook on a medium / high heat stirring until it boils
Stir in the butter
With the egg yolks in a separate bowl gradually mix in 1/2 cup of the lemon mixture
Whisk the egg / lemon back to the remaining lemon mixture and bring back to the boil, continue stirring until thick
Pour the mixture into the pie base
Whisk the egg whites until foamy and add the 6 tbsp of sugar gradually, continue to whisk until stiff peaks form
Cover the pie with the egg white mix and cook for 10 - 15 minutes until golden brown
