Cheesy Mash Potato
6 large Potatoes, peeled and quartered
8 oz Cream Cheese (softened)
1 cup shredded Cheddar Cheese
1 Egg
2 tsp Salt
1/2 tsp Pepper
Place the potatoes in a large saucepan, cover with water. Cover the pan and bring to the boil. Cooks for 20 to 25 minutes and drain.
In a bowl, mash the potatoes and add the remaining ingredients. Beat until fluffy.
Transfer to a greased baking dish, cover with foil and bake at 350°F for 40 minutes
