Cheesy Mash Potato

Ingredients

  • 6 large Potatoes, peeled and quartered

  • 8 oz Cream Cheese (softened)

  • 1 cup shredded Cheddar Cheese

  • 1 Egg

  • 2 tsp Salt

  • 1/2 tsp Pepper

Instructions

  1. Place the potatoes in a large saucepan, cover with water. Cover the pan and bring to the boil. Cooks for 20 to 25 minutes and drain.

  2. In a bowl, mash the potatoes and add the remaining ingredients. Beat until fluffy.

  3. Transfer to a greased baking dish, cover with foil and bake at 350°F for 40 minutes
