Chili Con Carne

Ingredients

  • 400g of mince

  • 2 medium onions, chopped finely

  • 4 cloves of garlic peeled and chopped

  • 1 red chili, finely chopped optional

  • 2 tbsp ground cumin

  • 1 tbsp ground coriander

  • 1 tsp cayenne pepper

  • 2 tbsp tomato puree

  • 2 bay leaves

  • 400ml beef stock

  • 1 8oz can chopped tomatoes

  • 1 can red kidney beans

Instructions

  1. Preheat oven to 320°F

  2. Brown the mince, and remove the meat with a slotted spoon

  3. Add the onions and cook on a low heat for 15 minutes. For the last 2 minutes add the garlic and chili

  4. Stir in the spices and cook for 30 seconds

  5. Add the tomato puree and cook for 1 minute

  6. Add meat, stock, and bay leaves to an oven proof dish and stir. Put the lid on the dish and cook for two hours

  7. Add the kidney beans for the last 10 minutes of cooking
