Mexican Cassarole

Ingredients

  • 10oz Doritoes

  • 1tbsp oil

  • 1/2 Onion, diced

  • 1/2 Red Bell Pepper, diced

  • 1 Jalepeno, diced

  • 1lb ground beef

  • 1/2 Green Bell Pepper diced

  • 1/4 Cup Tac Seasoning

  • 14oz Can Chopped Tomatoes

  • 1 Cup Sour Cream

  • 4 Cups Cheddar Cheese

  • Chopped Cilantro

Instructions

  1. Preheat the oven to 350°F (180ºC).

  2. Heat a non-stick skillet to medium-high and add the oil. Add the onion, red bell pepper, and jalapeño pepper. Cook for 7 minutes, or until the onion starts to get translucent.

  3. Add the ground beef breaking it apart until it has browned.

  4. Add the green bell pepper, taco seasoning, and tomatoes. Mix and cook everything for 3 more minutes.

  5. Grease a baking dish with cooking spray. Break half of the Doritos in the bottom of the tray.

  6. Top with half of the ground beef/veggie mixture, half of the sour cream, and half of the cheddar cheese. Create another layer of each, finishing with the cheddar cheese on top.

  7. Bake for 20 minutes or until bubbly.

  8. Serve with fresh cilantro
