Donuts
Ingredients
1 Cup warm milk (110°F)
1 tbsp yeast
1/3 Cup Sugar
2 Eggs
6 tbsp butter melted
1 tsp Vanilla
1/4 tsp nutmeg
1/2 tsp salt
4 Cups flour
Approx. 1 to 2 quarts of vegetable oil for frying
Glaze
1 Cup Icing sugar
1/4 tsp vanilla
1/6 Cup / 40ml of milk
Instructions
Whisk the milk, yeast and sugar together
Tightly cover with cling wrap and leave for 5 minutes
Add the eggs, butter, vanilla, nutmeg, salt, and 1/2 of the flour
Beat on a low speed for 1 minute with a dough hook (scrape down the sides with a spatula after 30 seconds)
Add the remaining flour an beat for 4 minutes until though dough pulls away from the sides (add a little flour if needed)
Lightly grease a bowl and put the dough in it, lightly cover and let rise in a warm place for 1.5 to 2 hours until its doubled in size
Punch the dough down to release the air and turn out onto a lightly floured surface
Use a rolling pin to roll out to about 1/2" thick
Cut out donuts and donut holes (combine the left of bits and repeat)
Place the donuts on a piece of parchment paper
Heat the oil in a large pan to 350°F
Fry 2 or 3 donuts at a time for approx. 45 to 60 seconds per side
Glaze
Mix all the ingredients
Dunk the warm donuts into the glaze, allow to set (20 mins)
