Chicken Fried Rice
Ingredients
3 Cups of cooked rice - at least one day old
2 Eggs beaten
1/3rd cup of finely chopped onion
1 chicken breast chopped into small 1/2" chunks or skinny strips
Chopped ham (optional)
1/3 cup of finely diced carrots (optional)
2 or 3 chopped spring onions
1/2 tsp table salt
1/2 tsp black pepper
1 1/2 tbsp soy sauce
Garlic Butter
2 tbsp softened butter
2 garlic cloves, crushed
1 tsp soy sauce
Instructions
Combine the garlic butter ingredients and set aside
Add a 1/2tbs oil to a wok and scramble the eggs with a pinch of the salt and pepper, remove from the wok and add set aside
Wipe the wok clean
Add a 1/2tbs oil to the wok and fry the chicken, onion, ham, and carrots with pinch of salt and pepper for 5 minutes
Add the spring onions for 30 seconds and the add the wok contents to the eggs
Wipe the wok clean
Add 2tbs of oil to wok, add the cooked rice and remaining salt and pepper. Break up the rice and cook for 3 to 4 minutes.
Add the chicken/egg mixture along with the garlic butter and mix until the butter is melted & mixed in
Move the rice to one side of the wok and add the soy sauce to the pan allowing it sizzle and thicken slightly before mixing everything together
