Coconut Slice

Ingredients

  • 4 oz Butter or Margarine

  • 4 oz Caster Sugar

  • 2 tbsp warm water

  • 2 Eggs

  • 3 oz Self Raising Flour

  • 1/2 tsp Baking Powder

  • 3 oz Desiccated Coconut

Instructions

  1. Cream butter and sugar together until pale and fluffy

  2. Whisk in the warm water, a spoonful at a time

  3. Whisk in the eggs (one at a time, mixing well)

  4. Sift in the flour and baking powder then stir in the coconut

  5. Spoon the mixture into a lined 2lb loaf tin

  6. Sprinkle top with a little extra coconut

  7. Bake for 30 to 40 minutes until risen and firm to the touch @360°F
