4 oz Butter or Margarine
4 oz Caster Sugar
2 tbsp warm water
2 Eggs
3 oz Self Raising Flour
1/2 tsp Baking Powder
3 oz Desiccated Coconut

Cream butter and sugar together until pale and fluffy
Whisk in the warm water, a spoonful at a time
Whisk in the eggs (one at a time, mixing well)
Sift in the flour and baking powder then stir in the coconut
Spoon the mixture into a lined 2lb loaf tin
Sprinkle top with a little extra coconut
Bake for 30 to 40 minutes until risen and firm to the touch @360°F
