Cherry Almond Cake

Ingredients

  • 8oz Margarine

  • 8oz Caster Sugar

  • 4 Large Eggs

  • 11oz Plain Flour

  • 1tsp Baking Powder

  • 6oz Glace Cherries (washed, dried, and halved)

  • 1oz Ground Almonds

  • 1oz Flaked Almonds

  • 10oz Sultana’s

  • 2 or 3 drops of Almond Essence

Instructions

  1. Place all the ingredients in a large mixing bowl and beat thoroughly until well mixed

  2. Place in a lined 8”(20cm) cake tin and smooth the top

  3. Bake in the oven for 2 1/2 hours @ 180°F

  4. Leave in the tin for 15 minutes then turn out to cool completely
